This healthy “melted ice cream” smoothie bowl tastes like everything a decadent ice cream sundae should be. You could easily have this 10 minute, 6 ingredient vegan paleo dessert for breakfast – and you would still be getting a fairly balanced, wholesome meal that also happens to be gluten and dairy free!

Ingredients

For "melted ice cream" (Note 1):

  • 3/4 frozen banana
  • 3/4 fresh banana

For chocolate sauce:

  • 1/8 cup cocoa powder
  • 1/2 – 1 tbsp maple syrup
  • 2 1/2 tbsp hot water

For "cookie dough":

  • 1/4 cup dates (~8 dates, soaked in hot water for about 2 minutes and drained)
  • 1/2 cup peanuts or almonds
  • 2 tbsp water (optional)

Instructions

For "melted ice cream":

  1. Blend the frozen and fresh bananas together until you get a smooth mixture. The consistency should be between that of a smoothie and that of an ice cream.

For chocolate sauce:

  1. Mix all chocolate sauce ingredients together until you obtain a smooth, silky mixture. It should have the consistency of melted chocolate.

For "cookie dough":

  1. In a food processor, blend the dates and nuts of choice together until you obtain a mix of finely ground, sticky clumps and bigger, crunchy pieces.
  2. If you want the mixture to be stickier/gooier, add water and blend for a few seconds.

Assembly:

  1. Transfer the "melted ice cream" into a bowl of choice.
  2. Pour on the chocolate sauce and sprinkle with "cookie dough" pieces.
  3. Tuck in!

Note 1: You can of course go via the ice cream (rather than melted ice cream) route and use only frozen bananas.
