I’m sure we can all agree that tiramisu is one of the best desserts. Ever.

The combination of creamy mascarpone cheese with the coffee soaked ladyfinger biscuits and a dusting of cocoa powder… I’m pretty sure that’s what dessert heaven looks (and tastes) like.

I’ve made a tiramisu cake some time ago – and it was AMAZING (if I do say so myself). Making tiramisu cupcakes, therefore, was just the natural progression of things.

These tiramisu cupcakes have all the best parts of that wonderful Italian dessert – the mascarpone cheese frosting, the generous soaking of coffee and the overall comfort food factor.

Because we’re awesome, we’ll take it one step further with a generous dose of chocolate. And when chocolate enters the game, you know things have just gone from great to freakin’ amazing.

First, we have gluten free vanilla cupcakes that we’ll dip into some coffee – these are the cupcake alternative to ladyfinger biscuits.

Then, we’ll make a hole in each cupcake (with an apple corer or an upside-down nozzle) and fill it up with the most amazing chocolate fudge sauce.

Tiramisu Cupcakes (Gluten Free)

These tiramisu cupcakes are a wonderful twist on that beloved classic Italian dessert. With fluffy vanilla cupcakes soaked in coffee, a rich mascarpone cheese frosting and a chocolate fudge centre – these cupcakes mean business.

Ingredients

For gluten free vanilla cupcakes:

  • 1/2 cup (120 mL) milk, room temperature
  • 4 medium (or 3 large) egg whites, room temperature
  • 4 tbsp yogurt or sour cream, room temperature
  • 2 tsp lemon juice, freshly squeezed
  • 1 tsp vanilla paste (or 2 tsp vanilla extract)
  • 2 cups + 2 tbsp (265 g) plain gluten free flour blend (I've used a store-bought blend with only 3 ingredients – rice, potato and maize flour – with no added xanthan gum)
  • 1/2 tsp xanthan gum
  • 2 tsp baking powder
  • 1 1/4 cup (250 g) granulated sugar
  • pinch of salt
  • 2 sticks (226 g) unsalted butter, softened at room temperature

For chocolate fudge sauce:

  • 1/3 cup + 2 tbsp (100 mL) milk
  • 1/4 cup (30 g) cocoa powder
  • 1/4 cup (50 g) granulated sugar
  • pinch of salt
  • 3 1/2 oz (100 g) dark chocolate, chopped, divided
  • 1 1/2 tbsp (40 g) unsalted butter

For mascarpone cheese frosting:

  • 2 1/2 cups (600 mL) heavy/double cream
  • 1 1/2 cups (180 g) powdered/icing sugar (can increase the amount if you want a sweeter frosting)
  • 2 cups (450 g) mascarpone cheese
  • 1 tsp vanilla paste (or 2 tsp vanilla extract)

For assembling the cupcakes:

  • 1 cup strong brewed coffee, warm to hot
  • chocolate shavings for decoration

Instructions

For gluten free vanilla cupcakes:

  1. Pre-heat the oven to 355 ºF (180 ºC) and line a 12-hole cupcake/muffin baking tin with cupcake liners.

  2. In a small bowl, whisk together the milk, egg whites, yogurt (or sour cream), lemon juice and vanilla paste until homogeneous.

  3. In a separate larger bowl, sift together the gluten free flour, xanthan gum, baking powder, sugar and salt. 

  4. Add the softened unsalted butter to the dry ingredients. Using a hand mixer, whisk the butter into the dry ingredients until you get small, pea-sized pieces. (Alternatively, you can use a stand mixer with the paddle attachment.)

  5. Add the milk+egg mixture and whisk until you get a smooth cupcake batter.

  6. Evenly distribute the cupcake batter among the 12 cupcake cases – they should be each about 3/4 filled.

  7. Bake in the pre-heated oven at 355 ºF (180 ºC) for 22 - 25 minutes or until an inserted toothpick comes out clean and the cupcakes are slightly domed and golden brown on top.

  8. Allow to cool.

For chocolate fudge sauce:

  1. In a saucepan, mix together the cocoa powder, sugar, milk, salt and half of the chopped chocolate. Heat until the chocolate has melted and you get a smooth mixture.

  2. Remove from heat and add in the butter and the rest of the chopped chocolate. Mix everything together until the butter and chocolate have melted.

  3. Set aside. The chocolate fudge sauce will thicken slightly while cooling.

For mascarpone cheese frosting:

  1. In a big bowl, whip together heavy/double cream and powdered sugar until soft peaks form. You can use a stand or hand mixer – or even do it by hand.

  2. Once at the soft peak stage, fold in the mascarpone cheese. You will get a smooth filling that spreads easily but will also hold its shape. Add in the vanilla paste and mix until it's evenly distributed.

Assembling the cupcakes:

  1. Dip each cupcake into the brewed coffee for about 5 seconds. The longer you keep the cupcake in the coffee – the more coffee it will absorb.

  2. Use an apple corer or a piping nozzle, turned upside-down, to create a hole in the middle of each cupcake. Fill it with the chocolate fudge sauce.

  3. Pipe the mascarpone cheese frosting with piping nozzle of choice (I used a Wilton 2D nozzle).

  4. Sprinkle with chocolate shavings.

  5. Enjoy!

Storage:

  1. The tiramisu cupcakes keep well in a closed container in a cool dry place for about 2 - 3 days.
