It’s no secret that I have something of a sweet tooth. In fact, “something of a sweet tooth” is a huge understatement – a quick browse through my recipes will reveal that my sweet tooth is well and alive… and thriving. But in order to gain balance and feel good, a fair number of the desserts I make (and love) are healthy.

CHOCOLATE RASPBERRY ENERGY BARS {gluten, dairy, egg, peanut, soy & ref. sugar free, vegan, paleo}

These chocolate raspberry energy bars are the perfect healthy snack – handy, nutritious, satisfying and utterly delicious. They are super easy and quick to make, requiring only 7 ingredients and 10 minutes. If you’re looking for your go-to afternoon or post-workout snack: this just might be it!

I don’t know about you, but come 3 o’clock in the afternoon… I need a snack. It doesn’t have to be huge or elaborate – it can be just a few mouthfuls and I’ll be happy. Without that snack (especially if I had a lighter lunch), I tend to transform into a grumpy, shaky mess with an attention span of about 2 seconds.

CREAMY 4-INGREDIENT AVOCADO PESTO {gluten, dairy, egg, nut, soy & ref. sugar free, vegan, paleo}

This creamy avocado pesto requires just 4 ingredients (two of which are salt and pepper!) and only 5 minutes to make. In combination with homemade gluten free pasta, it makes the perfect filling, nourishing, quick mid-week meal. (It’s also perfect in wraps, as a dip, on toast… or on a spoon.)

Last week we talked about gluten free pasta. We were all excited because it’s easy and quick to make, and all sorts of things have suddenly become possible. Gluten free ravioli? Gluten free lasagna? It’s all at our fingertips, and I’m already brainstorming away. If I could, I’d live in the kitchen, making pasta all day long.
