This gluten free veggie wrap makes the perfect healthy breakfast, lunch or dinner – once you try it, you’ll want to eat it all the time. It only takes 10 minutes to prepare, and it honestly couldn’t be easier to make. Filled with hummus, salad leaves, cherry tomatoes, avocado and pan-roasted spicy chickpeas, it’s a real flavour and texture explosion.
I am obsessed with this gluten free veggie wrap. And I’m not even exaggerating – there are days when I eat it for breakfast, lunch AND dinner… and those are definitely the good-food kinda days. You know, the days when everything you eat is exactly what you’re craving in that moment, like the universe somehow came together just to fulfil your every food wish on that day.
This creamy avocado pesto requires just 4 ingredients (two of which are salt and pepper!) and only 5 minutes to make. In combination with homemade gluten free pasta, it makes the perfect filling, nourishing, quick mid-week meal. (It’s also perfect in wraps, as a dip, on toast… or on a spoon.)
Last week we talked about gluten free pasta. We were all excited because it’s easy and quick to make, and all sorts of things have suddenly become possible. Gluten free ravioli? Gluten free lasagna? It’s all at our fingertips, and I’m already brainstorming away. If I could, I’d live in the kitchen, making pasta all day long.
These paleo brownies are about as healthy as a brownie can get – but that certainly doesn’t prevent them from being perfectly dense, fudgy, sweet and delicious. The dairy free avocado ganache makes these gluten free brownies even more spectacular… and no, you can’t taste the avocado. (Psst, there’s a RECIPE VIDEO as well!)
Let me tell you something about food bloggers:
(1) It feels bloody amazing to describe myself as one.
(2) We usually get the best recipe ideas at the worst possible moment (like that one time in the lab with concentrated hydrochloric acid in hand… or at two in the morning… or in the middle of a conversation with a normal person (a.k.a. not a food blogger) who’s now probably afraid of you after you started squealing excitedly about an ohmygosh-totally-brilliant-recipe-I’ve-just-thought-of).
(3) We count our food-blogging lives in terms of unusual milestones.
