Let me tell you a little story (or you can just skip to the bottom of the post to read the important bit, the aluminium free homemade baking powder formula – but the middle part is informative, and well… you can amuse yourself with a baking failure story).

It all started with a craving for cupcakes. Not just any old cupcakes, though. Raspberry cupcakes. Specifically, cupcakes with the (strained and deseeded, for nobody likes suspiciously crunchy cupcakes or a chipped tooth) raspberry puree mixed into the batter. Because, honestly, simply mixing the whole raspberries into the cupcakes is so predictable, done-before, and way too likely to succeed. Why not complicate things? Makes it so much more interesting.

As a scientist (in the making?), I like equations and nice, neat logical arguments. So here’s today’s favourite: if one cookie is great, two cookies are better, and if you put a filling in the middle, you have a winner. Another logical argument: everyone loves Nutella (fact), and everyone loves cookies (fact) – therefore it follows that everyone will love (to the power of about a thousand) these “Nutella” hazelnut chocolate sandwich cookies. Fact. Case closed. (And these are gluten free, dairy free and refined sugar free sandwich cookies, how amazing is that?!)

Where do you find your inspiration? I find it in ridiculously random situations, like sneaky snack attacks, where you’re not actually hungry for food, but for taste, and textures, and smells. And so you walk around your kitchen, and take a bite of this and that, and you realise that anchovies go amazingly well with walnuts, and you decide that the combination of chocolate and pecans is heavenly, only to be further improved with a pinch of oats. Of course, you are incredibly proud of yourself for discovering such groundbreaking flavour combinations – never mind that they have been around for eons.

You know when you have an “off” day? It’s especially after you’ve been ill for a while, and your body tries to find some semblance of balance, and starts, for whatever reason, behaving downright bizarrely. That was me a few days ago. My usual breakfast fare tends to include oatmeal (remember this chocolate peanut butter decadence?) or smoothies, or occasionally a yummy omelette. But that morning, my body decided to conduct itself like a petulant five-year-old and turned up its nose at all the usual breakfast foods. Now, this may all sound really strange to you. Nonetheless, I am a firm believer that we should listen to our bodies – which is how I ended up with a big (delicious) bowl of salad in front of me at 7am. Yep, so, that happened.
