The making of this dessert saw a lot of firsts. The first no-bake dessert (if we take “no-bake” to mean “no oven”, and “raw” to mean “no heat whatsoever”… it’s a science thing, this love for definitions). The first time using gelatine. The first cookie-crumb tart bottom. The first mirror glaze. That last one was completely 100% accidental. And, oh my, do I love such accidents.
We’ve blinked, and it’s nearing the end of May. Which is insane, because it feels like April was only just yesterday and where is the time going? Lately, I feel like I’m always in a hurry, too busy to think, always chasing after things that need doing, while adding another few to my bullet-pointed, highlighter-exhausted to-do list.
But time running aways from us has at least one upside: summer is almost here, and berries are (or will soon be) in season. Berries of all sorts, with their shiny colours and juicy taste and smell of sunshine. To celebrate, let’s make this gluten free strawberry tart.

It finally feels like spring – yes, even in the UK. For the last few days, the skies have been blue, the sunshine bright and cheerful, and the temperatures almost summery. The kind of days that make you happy, and make getting up in the morning so much easier.
It’s only right, then, that we celebrate such unexpectedly lovely weather with some summery desserts. I know that tarts and tartlets are actually an all-year-round kind of dessert… but in my mind, I always associate them with summer picnics, lemonade and a gentle breeze that makes the heat pleasant rather than overwhelming.
Lemon desserts can be tricky if you eat an egg-free or vegan diet. Right…?
