These strawberry popsicles are the perfect summer treat – refreshing, aromatic, sweet, and healthy. The strawberries give them the bright colour, as well as an abundance of vitamins. This easy popsicle recipe is gluten, dairy and refined sugar free, and it’s bound to become a favourite this summer.

Let me tell you about UK weather this week: hot, hot, hot, too hot, I’m melting here… and today: Antartica wants its weather back! It’s cold and it’s miserable and it’s raining and yes, I know it’s the UK, but honestly?! (Okay, okay, it’s still around 20 ºC but come on.)
But we’re not giving up here. It’s supposed to be summer and therefore summer it shall be – complete with shorts, sunglasses and ice cream. I don’t care if I’m freezing cold and can’t see a thing and my tongue is about to fall of. Because. It’s. Summer.
To be fair, eating ice cream isn’t be much of a sacrifice (okay, yes, the numb tongue might be a problem). Especially not when it comes in the form of these AMAZING healthy strawberry popsicles. Yes, amazing in all-caps. They’re that good. It should be shouted from the rooftops.
These strawberry popsicles really are the perfect summer treat.
Bight, happy and colourful.
Sweet, but not overly so.
Healthy: gluten, dairy and refined sugar free, vegan and paleo.
Easy to make.
Super duper delicious.
And just AMAZING!
That is, amazing in the I-could-eat-three-in-one-sitting way, which is the best way there is.
The recipe is basically just dumping the ingredients into the food processor, blending, pouring into popsicle moulds and freezing. Frankly, waiting is the hardest part. I mean, how are you expected to wait a few hours for what is basically a smoothie to freeze?! But you totally should. Wait, I mean, not grab a spoon. No, not a straw either. Seriously, put that down.
Because while they’re delicious in their liquid-smoothie form, they’re that much more scrumptious when frozen. (Really, really scrumptious.) Also: it’s summer, remember?
Regardless of your current weather situation, you should 100% make these AMAZING (here we go again) healthy strawberry popsicles. And if you’re on a beach somewhere, basking in sunshine… I don’t like you very much right now. Still, have a popsicle.
- 350 g (1¾ cups) halved strawberries
- 70 g (1/4 cup) maple syrup
- 190 mL (3/4 cup + 2 tbsp) almond milk
- 2 tbsp lemon juice
- 1 tsp vanilla extract
- In a food processor, blend all the ingredients together. You can either blend until completely smooth, or leave a few small chunks of strawberries for extra texture – both versions are super yummy.
- Pour the mixture into popsicle moulds and freeze overnight.
- The next day, remove the strawberry popsicles from the popsicle moulds and enjoy!
